Everyone, pls support my cute roomie!!! she makes the most amazing baked goods, and its noooo surprise that im really her numba one fan xD ~ this is her newest creation, brown sugar muffins! yumyumyum~<3
Brown Sugar Muffins! I woke up at 6:30 this morning to do some homework but I was hungry and super tired. Library, closed. Dining hall, closed. So I decided to have some “me” time and bake! Hopefully my roommate doesn’t mind me feeding her every 2 seconds!
Brown Sugar Muffins
1/2 cup Butter
1 cup light brown sugar
1 cup milk
1 egg
2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 banana
For the drizzle:
1 tbsp butter
2 tbsp brown sugar
1 tbsp corn syrupcombine butter and sugar and mix until smooth. beat egg and milk together and add to the butter mixture. in a separate bowl, combine flour, baking soda, and salt, then add to the butter mixture. mix until well combined!
slice 1 banana for topping and place on top of each muffin.
pour mixture into muffin pan, about 2/3-3/4 full. bake at 350 degrees for 20 minutes.
while the muffins are baking (or after, up to you), combine butter, corn syrup, and brown sugar until the butter has melted. drizzle the sugar mixture on top of the muffins when they come out of the oven!

Recipe:
For the bread!2 1/2-2 3/4 cups all-purpose flour
1/2 cup sugar
1/2 tsp salt
1/8 tsp nutmeg
1/8 tsp cinnamon
1 package yeast
1/3 cup milk (i used non-fat)
2 eggs
4 tbsp butter
1/4 cup water
1 tsp vanillaFirst mix the dry ingredients (flour, sugar, salt, nutmeg, cinnamon, yeast) in a large bowl. Then, in a medium saucepan, heat milk, butter, water and vanilla until the butter melts, and stir to mix. After letting the milk mixture cool for 2-3 minutes, add to the flour mixture and stir under low power (or by hand) until mixed. Then, add the eggs, one at a time, mixing well after each addition. The dough will probably be very sticky, so add additional flour until you can knead it. cover it with plastic wrap and let rest for an hour.
For the topping:
2 tbsp corn syrup
1/2 cup brown sugar
4 tbsp butterHeat on medium heat until butter is melted. Mix the mixture, and pour into a 9X2 circular cake pan (grease first). set aside to cool
For the filling
4 tbsp butter
1/2 tsp cinnamon
1/3 cup white chocolate (any other filling you’d like to put in), crushedMix the butter and cinnamon together until smooth
Final Step!
Gently let out the air bubbles from the dough and roll out into a 12X16 rectangle. Spread butter mixture on top and sprinkle white chocolate. Using a pizza cutter/knife, cut into 6 2X16 strips. Roll the first strip loosely and put into center of the pan filled with filling. Use the rest of the strips, wrapping around the center piece in a circular fashion until the pan is filled. Bake at 350 degrees for 30-35 minutes!
(i checke on it after 20 minutes and the top was really brown. to prevent burning, you can put a piece of aluminum foil or cookie sheet on top for the rest of the time)
